Camping Tips


Kitchen essentials

·         Water – 2.5 to 5-gallon containers. You need 2 – 4 quarts of water per day per person. And that’s only to drink. Don’t forget water will be needed for cooking and clean up.
·         Stove and fuel (and waterproof matches)
·         Tarp, ropes, clothesline, etc.
·         Table or something to use as a table if you want to rough it.
·         Seating – camp stools, camp chairs, logs, large rocks, etc.
·         Frying pan and Dutch oven – cast iron is best but heavy. You can transport stuff in the Dutch oven.
·         Coffee pot – can be used to heat water for tea, soup, pasta, coffee, hot chocolate or for doing dishes
·         Plastic bowl or tub – for washing up and storage
·         Rags, old towels, scrubbies and biodegradable soap
·         Eating utensils – knives, forks and spoons
·         Cooking utensils – sharp knife, can-opener, large spoon, spatula
·         Cutting board – wood or plastic
·         Cooler – good for up to 2 days if most of the food is frozen
·         Plastic tubs with tight fitting lids (or bear proof container)
·         Zip lock bags for food storage.
·         Aluminum foil (wrap foods up and cook)

Food To Take on a Camping Trip

·         Premade meals – dried, dehydrated, freeze dried (this stuff can be expensive, be creative and make your own meal ahead of time yourself)
·         Tea, coffee, hot chocolate, dry juice mixes
·         Hard cheese does not need refrigeration (I don't care what they say)
·         Cereals – granola, cream of wheat, oatmeal, muesli
·         Fruit – fresh and dried
·         Nuts – great in meals or for snacking
·         Sunflower Seeds – great in meals or trail mixes
·         Breads – flat breads and hard crackers (regular bread gets squashed)
·         Soups – instant Knorr, Ramen or bullion to make your own
·         Lentils – quick cook, dried or canned beans
·         Pasta – thinner cooks faster
·         Dried veggies
·         Honey, sugar
·         Peanut butter
·         Flavoring agents – soy sauce, hot sauce, salt, pepper, garlic, dried onion, cilantro, cinnamon etc.
·         Canned meats – or dried
·         Alfalfa or dry beans for sprouting (in a zip lock bag with damp paper towel).
·         Chocolate, marshmallows, graham crackers! (For S'mores)

·         Potatoes - you can almost make a meal out of a baked potato (with cheese), or chop and fry up potatoes with eggs, onions, almost anything. A versatile, not squashable food.

More Snow Then Last Weeks Blizzard!

The trees are so laden with snow they are hanging.
The roads are icy and packed.
I am pretty sure this will be the last of the big snowstorms for this season. It has been a off and on all season, but the last three storms packed the most punch! Ready for Spring and my flowers and veggies..lol :)

Well, we are getting ourselves ready for Thanksgiving! I just love this time of year, with all the pretty smells and sites to behold we have plenty to see and do. I want to make place cards for our guests and a banner for the fireplace. Plenty of yummy, festive foods to be prepared and presented...so, off to the craft store and then to the farmer's indoor market! Talk to you soon.

"The President's Own" The Marine Band

The family enjoyed an evening out to see the Marine Band, "The President's Own"...they played at our university and it was a wonderful time!

Sergeant Bennear was the announcer and soloist for the band. He did a medley of Irish songs which was very moving and uplifting.

Homecoming Football Game

Well, we're off to the Homecoming game at BHS...go DRAGONS!! It is raining and the band cancelled but we still have our hot cocoa and blankets. Crock is full of nice hot soup for our return and lots of apple cider. I will post pics tomorrow from the game. Yay!

Closing Out Summer

It is hard to believe that summer is coming to a close...we had a good time, going camping..to the beach (about every other day!), and growing our garden..having BBQ's and lots of friends to enjoy the good times. But, it is on to school with the younger set and bringing in the last of the summer harvest to put up. Enjoy all there is to the good life you have my friends...and I look forward to a wonderful FALL!! Oh, my Etsy shop is doing great and I am enjoying it very much...until later :) smiles!

The Legend of the Christmas Tree

THE LEGEND OF THE CHRISTMAS TREE

Two little children were sitting by the fire one cold winter's night. All at once they heard a 
timid knock at the door, and one ran to open it. There, outside in the cold and the darkness, stood a child with no shoes upon his feet and clad in thin, ragged garments. He was shivering with cold, and he asked to come in and warm himself. "Yes, come," cried both the children; "you shall have our place by the fire. Come in!" They drew the little stranger to their warm seat and shared their supper with him, and gave him their bed, while they slept on a hard bench. In the night they were awakened by strains of sweet music and, looking out, they saw a band of children in shining garments approaching the house. They were playing on golden harps, and the air was full of melody. Suddenly the Stranger Child stood before them; no longer cold and ragged, but clad in silvery light. His soft voice said: "I was cold and you took Me in. I was hungry, and you fed Me. I was tired, and you gave Me your bed. I am the Christ Child, wandering through the world to bring peace and happiness to all good children. As you have given to Me, so may this tree every year give rich fruit to you." So saying, He broke a branch from the fir tree that grew near the door, and He planted it in the ground and disappeared. But the branch grew into a great tree, and every year it bore wonderful golden fruit for the kind children.

It's Beginning to Look A Lot Like Christmas......

I can't believe Christmas is almost here! Going to do some last minute shopping on Friday, which should be fun...looking forward to the hustle and bustle of the shops on 'Maine' St.! The month seemed to fly by with all the cookie and cake baking, gifts and wrapping paper, and visits from friends and family. Can hardly wait for the peacefulness of Christmas Eve..I think we will be getting snow which just adds to the magic of the season! Preparations for Thanksgiving

The girls and I were thinking of making these place cards for the dinner table for Thanksgiving...we saw this idea on a website off google and wanted to try it. I guess we should start gathering acorns this afternoon for the project!
We hope to have them done this evening and then making pies and prepping the veggies for the side-dishes. We are expecting 6 to 8 inches of SNOW tonight! So glad we decided not to travel this year! Happy Thanksgiving everyone!

Happy November

Well, it is November and we are gearing up for the coming holidays. Thanksgiving is one of my favorite holidays, I love cooking for the family and all our loved ones gathered together. Would love to go to the Macy's Day Parade in New York City one of these years. My 7 year old son just loves the balloons and Santa! It doesn't take long to go there from here in Maine and we could have Thanksgiving dinner the night before and left overs when we return! Oh, how I love this time of year. What are all of you doing for Thanksgiving? I would love to know.

Carving Pumpkins and Roasted Seeds

We will be carving pumpkins this weekend for All Hollow's Eve!!! My kids get such a kick out of Halloween and the pumpkins are a big part of the fun. We always roast our seeds afterwards also, so nothing goes to waste. I though I'd share a recipe for Roasted Pumpkin Seeds with you all. Enjoy!

8 Servings Prep: 20 min. Bake: 50 min.
Ingredients

2 cups fresh pumpkin seeds
3 tablespoons butter, melted
1 teaspoon salt
1 teaspoon Worcestershire sauce
Directions
Line a 15-in. x 10-in. x 1-in. baking pan with foil and grease the foil. In a small bowl, combine all ingredients; spread into prepared pan. Bake at 250° for 45-50 minutes, stirring occasionally.
Increase heat to 325°. Bake 5 minutes longer or until seeds are dry and lightly browned. Serve warm, or cool before storing in an airtight container. Yield: 2 cups.

New England in the Fall!!

Jack O'Lanterns, woodsmoke, corn mazes and Haunted Houses...Pumpkin spices, rustling leaves, candlelight, caramel apples and scary movies! Bonfires, spooky stories, flannel shirts, candy corn and ghost and goblins. Foliage, festivals, hayrides...Oh, how I love New England in the Fall!!

Happy October!


I just love the fall, don't you? Here in Maine we get the beautiful colors from the leafs and the crisp, cool nights before winter sets in. The kids are busy deciding on their costumes for Halloween and I am picking out fabric. It is one of my favorite times of year! I know we will be making caramel apples soon too. Enjoy your day everyone.


I think we will try these out this year!

Caramel Apples (refrigerate apples overnight before dipping so caramel sticks)

6 apples
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons milk

Directions

Remove the stem from each apple and press a craft stick into the top. Butter a baking sheet.
Place caramels and milk in a microwave safe bowl, and microwave 2 minutes, stirring once. Allow to cool briefly.
Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

Time For Apple Picking and Halloween Goodies!!

We really enjoy this time together and we get to make so many yummy things with our apples. This year, we are making homemade applesauce. The pumpkins look so lovely this year! Need to pick a big one! :)

Back to School

I love this time of year, new clothes and the smell of pencils and crayons...Then the sweet transition into fall. Soon we will be making apple butter to put up for the winter and caramel apples for Halloween! Have a wonderful school year everyone!

Independence Day Picnic

I love being outside in the summer, with all the smells and colors! It is the 4th. of July weekend and it is time to set up for the BBQ picnic. The colors are so easy, with the Red, White and Blue decorations..flags for all!
We will be making these pretty cupcakes for after the BBQ...the girls love to come up with special ideas for the desserts.

Happy 4th. of July!!

I remember as a little girl going to Congress Lake for the July 4th. fireworks, and like clock work, as soon as it became dusk....it would start to RAIN! Not a downpour kind of rain, just that drizzley kind that misted you as you looked up. Then after the finale was done, we would fill to our cars and be stuck in a traffic jam for 30 minutes...then it started to rain hard! Oh, it used to make my father so irritated and he would grumble while my mother smiled to us kids in the back seat. Those were fun times for sure. I wish everyone a fun and safe Independence Day!
